Vegan Carrot Cake Bundt Cake

Carrot cakes are one of my favorite kind of cakes next to banana breads and brownies. The thingie I like about it, is that they are filled with veggies and mostly natural sweetened. This Carrot cake recipe is a bundt cake but you can definitely make them in a cake shape or as cupcakes. The frosting is made of coconut, which I like better than soaking up cashews. you can make it as thick or thin as you like! Not feeling the carrot cake anymore? What you'll need for the cake:


300gr (buckwheat) flour

270gr dates (puree) mixed with

125ml water

2tsp cream of tartar / baking powder

1tsp baking soda

250ml unsweetend almond milk

250ml water

3tbsp agave

Pinch of salt

100gr sweet potato puree

4tbsp (white) vinnegair

Juice and zest of one orange

1tbsp vanilla extract

Pumpkin spice

Cinnamon

200gr grated carrot

2 hands of raisins


Frosting

200gr coconut puree/cream

Mixed with a little water (just splash by splash to see how thick you want it)

2-3tbsp agave

Cinnamon

Orange grater


Preheat the oven to 350°F / 170°C.


Blend the dates in a blender with half a cup of water and set aside.Cut the medium sweet potato (about 115 grams) in half and place inside down in the preheated oven for about 20 minutes or until soft. Alternatively, you could peel and cut the sweet potato in cubes and boil for about 15 minutes in a pan with water. Both methods are fine to create sweet potato puree.


Put some oil in your Bundt cake pan, to prevent your cake from sticking. Set aside for later.


In a large bowl, whisk together the flour, spices, date paste (dates that you blended with water), salt, baking powder, and baking soda. Add in the almond- or oat milk, water, and sweet potato puree, and mix very well. Add in the vinegar and vanilla, and mix until well combined. than as last add the grated carrots and raisins.


Pour the batter into the prepared pan, and bake for 40-50 minutes.


Meanwhile make the coco frosting by blending the coconut cream with water, bit by bit, how thick you like it! than add the other ingredients by own flavor.


Let the cake cool completely before removing from the pan. Once the Bundt cake is cooled, flip onto a plate and pour over the frosting, some cinnamon and orange grater to top it off perfectly.
