Easy Peasy Model Kitchen: Autumn Curry

The clock went an hour back in time, the days are getting shorter and we slowly start to change up our summer clothes to thick sweaters, but on the brighter side: squash season started again! In the United States I really feel that squashes are a huge thing: in the Whole Foods they made a special pumpkin flavored section, can tell you we ain't have that in the Netherlands! So I keep on making all those stews and curries in the apartment. 1. it's easy to make a lot and eat more meals from it and 2. it's heating and filling. So I got this insanely easy Curry recipe which everyone can make in a model apartment, you basically need just 3 ingredients and you can add as much other ingredients to it as you like, no excuses! What you need:
- Red onion (optional)
- Garlic (powder) (optional)
- Cinnamon (optional)
- Curry powder
- Turmeric (optional)
- Cayenne pepper (optional)
- Cumin (optional)
- Ginger (powder) (optional)
- Salt
- 1 can full fat coconut milk
- splash packed coconut milk (thin one)
- 1/2 to 3/4 can of pumpkin puree
- Veggies (carrots, sweet potato, spinach for this time but cauliflower, bell pepper, mushrooms, aubergines, tomatoes or pumpkin works amazing as well!)
- 1 can chickpeas
- Coriander (optional)
Sauté the red onion in the pan and add all the spices in it and mix them. When sautéed well add the coconut milk and the pumpkin puree and the coconut milk, you now have a very thick pumpkin soup (which is actually very delicious as well). But than add the chopped sweet potatoes and carrots till they got mushy and soft than add for the last couple of minutes the spinach and chickpeas. Serve with brown rice at voila!
